Here is one of my favorite springtime cocktails


I love this brightly colored drink.  It has a nice kick from the ginger but is mellowed out by the sweetness of the carrot juice.  Cheers!


Jack Rabbit
3 ounces freshly squeezed carrot juice
1/2 ounce lemon juice
1 ounce Ginger Syrup
1-1/2 ounces Crop organic vodka
Shaved carrot


Combine juices, ginger syrup and vodka in a cocktail shaker.  Add ice, shake, pour into highball glass, and garnish with carrot shavings.

Grilled Skirt Steak with Mustard, Caramelized Spring Onion & Pleasant Ridge Reserve Cheese


Fire up your grill!  Pair this grilled favorite with a spicy red wine made from Genache that offers flavors of ripe raspberries, baking spices and Mediterranean herbs.


Serves 6


2 tablespoons extra virgin olive oil
3 medium spring onions, thinly sliced
2 tablespoons sugar
6 skirt steaks (Kobe if available), 6 ounces each
6 teaspoons Dijon mustard
3 tablespoons chopped tarragon
8 ounces thinly sliced Pleasant Ridge Reserve cheese (or other firm cow’s milk cheese)
Sea salt & freshly ground black pepper


Caramelize the onions
Heat the olive oil in a nonstick pan set over medium heat and add the onions. Sauté the onions until they are tender and translucent, about 8 to 10 minutes. Add the sugar and cook for another 5 minutes until the onions are caramelized and golden brown.


Season the steak
Lay the steaks on a work surface and season both sides with salt and pepper. Spread one side of each steak with the mustard. Sprinkle the tarragon over the mustard and top with the caramelized onions and cheese. Beginning at the thinner end of the steak, tightly roll the steak, jelly roll style, and secure with a toothpick.


Grill the steak
Heat the grill or grill pan over medium high heat. Grill the steaks for 7 minutes per side for medium rare. Remove from the heat and allow to rest for 5 minutes.


Remove the toothpicks and slice the steaks. Serve immediately.
